Alexis Hillyard (she/her) is a queer and disabled YouTube Creator, self-taught vegan chef, and entrepreneur. Born without her left hand, Alexis uses her stump as a kitchen tool - from spatula to juicer - while expanding the vocabulary of what's possible in the kitchen each week on her YouTube show ‘Stump Kitchen', a series that celebrates body diversity, gluten free vegan cooking, and the amazing, unique ways we move through the world.

In this session, Alexis will speak to the role that the Edmonton Public Library Makerspace played in jump-starting her career as a content creator. You'll also hear funny stories about life with a limb different, and participate in a live Q&A.

Throughout this session Alexis will guide you in making some delicious vegan and gluten free cookies and show you through a variety of 'stump techniques' used in her weekly YouTube show. Recipe is below.

Chickpea Chocolate Chip Cookies(vegan and gluten free and packed with protein and fibre!)
  • 1 (15 oz.) can chickpeas
  • 1/2 cup gluten-free oat flour (or any flour of choice - and you can make your own oat flour by grinding oats in a coffee grinder)
  • 3/4 cup coconut sugar (or any kind of sugar you like - I rarely have coconut sugar just laying around :)
  • 3 tablespoons melted coconut oil
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon raw apple cider vinegar
  •  3/4 cup dark chocolate chips
You will also need a food processor, parchment paper, cookie sheet, and large bowl.

This session will be recorded and available to all attendees until September 7.
